Lyme Bay Winery’s have created several cocktails using Brut Reserve NV and Sparkling Rosé NV combined with a selection of cordials and fresh fruit juices. 

Pomegranate and Rosé Royale

The first sparkling wine cocktail on our list is the Pomegranate and Rose Royale. This cordial cocktail is easy to make, using a mix of cordial with sparkling Rosé, it’s a delightfully fruity drink with delicate botanical notes.

Ingredients: 

  • Pomegranate cordial – we love Frobishers Pomegranate and Rose cordial
  • Sparkling Rosé – we love Lyme Bay Sparkling Rosé

Sparkling Lemon and Mint Julep

This beverage utilises sparkling wine, and the light and refreshing flavours of lemon and mint. 

Ingredients:

  • Lemon cordial, or sparkling lemon water – we love Frobishers Lemon & Mint Cordial
  • Sparkling wine – we love Lyme Bay Winery’s Brut Reserve NV
  • Mint to garnish

Sloe and Raspberry Fizz

English sparkling wine is a great match for the tangy and tart taste of raspberry. With a sharp and fizzy flavour, mellowed with a handful of fresh mint sprigs, this vibrant cocktail is sure to be a crowd favourite.

Ingredients: 

  • Raspberry cordial – we love Frobishers Sloe & Raspberry Cordial
  • Sparkling wine – we love Lyme Bay Winery’s Brut Reserve NV
  • Mint to garnish 

Cranberry Poinsettia

A twist on the classic Poinsettia, this classy cocktail containing sparkling wine is great for entertaining in any season.

Ingredients: 

  • 50ml cranberry juice
  • 25ml Triple Sec or orange liquer 
  • 75ml sparkling wine – we love Lyme Bay Winery Brut Reserve NV
  • One bay leaf to garnish

Method:

1. Chill the triple sec, cranberry juice, champagne and a martini glass in the fridge until cold.

2. Pour the triple sec and cranberry juice into the chilled glass, then slowly top up with the sparkling wine and garnish with a bay leaf.

Pineapple Mimosa

Perfect for brunch or afternoon tea, a Pineapple Mimosa is a mellow cocktail with a tropical tang.

Ingredients: 

  • 60ml pineapple juice
  • 15ml Triple Sec or orange liquer 
  • 90ml sparkling wine – we love Lyme Bay Winery Brut Reserve NV

Method:

1. Put the pineapple juice and triple sec in a champagne flute.

2. Stir gently to combine.

3. Top up the glass with sparkling wine and serve.
