Roast potatoes, is a Sunday really complete without them? Chefs and home cooks alike have been sharing their hacks to make them perfectly.<\/p>\n
Mary Berry has shared her recipe for perfectly “crunchy” golden roast potatoes. Sam Stern, a professional chef and cookbook author, has said you can make the \u201cbest roast potatoes you\u2019ll ever eat\u201d in six simple steps.<\/p>\n
Now another chef has detailed a secret ingredient he swears makes for the best roast potatoes. Chef Oli Brandon says the trick is to add a teaspoon of baking soda while they’re cooking.<\/p>\n
In a video on his TikTok page, he bites into one of his freshly made spuds. He describes the satisfying crunch as: “The sound of the best roast potatoes you’ve ever had.”<\/p>\n

In a step-by-step guide, Oli explains: “Put one teaspoon of baking soda and salt into boiling water and cook your potatoes until they’re fork tender but not falling apart.”<\/p>\n
Adding baking soda at this stage breaks down the starch in the potatoes called pectin and draws it to the surface. This helps to create a crispy surface and gives the potatoes a lovely golden brown color.<\/p>\n
Once the potatoes are fork tender, drain them off and fluff them up. Oli continues: “Next, finely chop rosemary and garlic and add into a pan with lots of olive oil.<\/p>\n

“Toast these until lightly golden brown and then drain the oil off all over the potatoes.<\/p>\n
“You’ll be left with an array of crunchy rosemary and garlic crumbs. Don’t throw them away we will be using it later,” says Oli.<\/p>\n
Using the freshly drained oil, Oli spreads a coating over the top of the potatoes before they are baked.<\/p>\n
“Make sure you spread that oil all over the potatoes, add salt and pepper, and then bake them at 350F for 20 minutes,” he said.<\/p>\n
“Turn them over and bake them for another 20 to 30 minutes or until super crispy.”<\/p>\n
Finally, transfer your roast pirates into a bowl and add the toasted garlic and rosemary crumbs. Oli recommends adding a pinch of salt at this point too, before mixing all of the ingredients together.<\/p>\n
