Ingredients

  1. 5 Pound zucchini
  2. 1 onion chopped
  3. 3 chopped green onions
  4. 1 teaspoon minced ginger
  5. minced cloves of garlic
  6. 1 cup chopped peppers 🌶
  7. 1 cup carrots 🥕
  8. 32 oz chicken broth
  9. 2 cans diced tomatoes
  10. 1 can tomatoes sauce
  11. 1 tablespoon hot pepper paste
  12. 2 cups hot water
  13. 1 teaspoon salt
  14. Spices
  15. 3 cloves
  16. 1 dried lemon light
  17. 1/2 teaspoon each all spices whole and black pepper turmeric seeds of coriander cumin seeds sumac seed
  18. 2 star anise
  19. 1 cinnamon stick
  20. 3 bay leaves
  21. Dash nutmeg
  22. 2 cardamom seeds
  23. Parsley and lemon optional

Steps

  1. In a pot over medium heat use 2 cups of chicken broth add all the spices and let it cook for 10 minutes

  2. Over medium heat in big pot I add onions with 2 tablespoon olive oil and cook for few minutes then add the ginger garlic carrots peppers cook for few minutes add then the salt

  3. 10 minutes later I add pepper paste cook for few minutes then I add the zucchini mix all cook for 5 minutes

  4. Add the tomatoes diced and sauce and all the liquid that I mentioned on top with spices chicken broth cook for 25 minutes in the end I add 1/2 cup fresh parsley and 1/2 cup fresh lemon juice is optional enjoy
