Ingredients

  1. 2 1/4 cups sugar
  2. 1 cup vegetable oil
  3. 3 eggs
  4. 3 teaspoons vanilla
  5. 2 cups grated zucchini
  6. 3 cups flour
  7. 3 teaspoons cinnamon
  8. 1 teaspoon salt
  9. 1 teaspoon baking soda
  10. 1 teaspoon baking powder

Steps

  1. Combine sugar, oil, eggs, and vanilla until creamy

  2. Add flour, cinnamon, baking powder, and baking soda. Mix until smooth.

  3. Add zucchini and mix.

  4. Pour in to greased loaf pans

  5. Bake at 325°F for 45-55 minutes
