Ingredients

  1. 1 lbs. of dry pinto beans
  2. 8 C. water
  3. Remove any foreign debris and any beans that are broken. Wash beans and cover with the 8C. Of water and bring to a boil. Cook for 5 minutes and turn the heat off. Let the beans soak for an hr. w/lid
  4. Soaked beans (They will have doubled in size.)
  5. 1 smoked ham hock
  6. 1 lbs. of lean ground beef
  7. 2 packs onion soup mix
  8. 2 packs taco seasoning
  9. 2 bay leaves
  10. 1 t. chipotle powder
  11. 1 1/2 cans tomato sauce
  12. 1 can tomatoes w/ chili’s
  13. 1 can chopped chili’s
  14. 1 can stewed tomatoes
  15. 1 bottle a medium dark beer
  16. 5 inches Enough water to cover all by at least

Steps

  1. Put everything in a tall pot fitted with a lid and bring to a boil and reduce the heat to medium high. Cook on medium high heat for thirty minutes and then reduce the heat again to medium and continue to cook for another thirty minutes. Reduce the heat again to medium low and cook for another 5 or 6 hours until beans are tender but not mushy.

  2. Enjoy! Serve over rice to make a complete meal. Maybe bake some cornbread, too!
