Ingredients

  1. 1 cup White Rice, Uncooked
  2. 2 cups Water
  3. 3 lg Bell Peppers, Top Removed and Seeded
  4. 15 oz Can Tomato Sauce
  5. 2 cups Mozzarella Cheese, Finely Shredded
  6. 1 1/2 lbs Ground Beef
  7. 1 Onion, Diced
  8. 1/2 tbsp Garlic Powder
  9. To Taste Salt
  10. To Taste Pepper

Steps

  1. Preheat oven to 350.

  2. In a saucepan bring 2 cups water to a boil. Add rice and stir. Cover, reduce heat to simmer and cook for 20 minutes.

  3. Remove cooked rice, fluff with a fork and set aside.

  4. In a saucepan place the 3 bell peppers and add enough water to just cover them. Bring the water to a boil and cook them for 10 minutes.

  5. Remove bell peppers from water and place into a baking dish.

  6. In a skillet over medium heat, brown ground beef. Drain and return beef to skillet.

  7. Place the skillet back onto the medium heat and add onion, cooked rice, garlic powder, salt & pepper stirring to combine.

  8. Add the tomato sauce to the skillet, stir, and reduce heat to simmer. Cook for 10 minutes while stirring occasionally. Remove from heat.

  9. Separate the beef mixture into 3 equal amounts and spoon it into the bell peppers. Place into the preheated oven and bake for 45 minutes.

  10. Sprinkle equal amounts of the mozzarella over the bell peppers and bake 5-10 minutes more or until the cheese is melted and lightly browned. Remove from oven and serve.
