I didn’t have much in the fridge so


  1. 1 serving of noodles (I used miracle noodles)
  2. 2 plantains
  3. 2 carrots
  4. Handful parsley (optional)
  5. 2 eggs
  6. 2 tbsp olive oil
  7. 1 handful cashew
  8. Sauce:
  9. 1 tbsp honey
  10. 1 tbsp anchovies sauce
  11. 1 tbsp miso paste


  1. Heat a skillet with 1 tbsp of olive oil, and add slices plantains, keep flipping them over and over until they’re golden brown, now add the cashews.

  2. Add thinly sliced carrots, and the other spoon of olive oil. Mix, and cover to cook.

  3. Heat a pot with water, and boil the noodles as required. Crack the eggs onto the skillet with the vegetables and mix.

  4. Strain the noodles and add to the skillet once the carrots are slightly tender.

  5. Chop the parsley and add it as well with the sauce. Mix and cover the skillet for 5 minutes.

  6. Serve!
