So I’ve made Cora’s bacon as linked below. I don’t have a slicer and quality stainless steel slicers are pricey so here’s my out! La Bonita Market sells sliced bacon @ $2.99/lb so I’m going forward with that!
I’m sodium watchful so adjust to your needs.
Ingredients
- 1 lb bacon
- 2 cups water
- 1 cup brown sugar
- 1/3 cup salt
- 2 tbsp coarse ground chili's
- 1 tbsp hot sauce

Steps

Sliced bacon tied together. I tied it three times across
Bring all the marinade ingredients together and bring to a boil and as soon as it’s boiling remove from the heat.
Let the marinade cool and then pour over the bacon.
Place in the refrigerator and turn once daily for 3 days.
After it’s marinated take it out and pat dry.
Soak your wood chips, I’m using apple, for at least an hour.
In the smoker!
