So I’ve made Cora’s bacon as linked below. I don’t have a slicer and quality stainless steel slicers are pricey so here’s my out! La Bonita Market sells sliced bacon @ $2.99/lb so I’m going forward with that!

I’m sodium watchful so adjust to your needs.

Ingredients

  1. 1 lb bacon
  2. 2 cups water
  3. 1 cup brown sugar
  4. 1/3 cup salt
  5. 2 tbsp coarse ground chili's
  6. 1 tbsp hot sauce
  7. String

Steps

  2. Sliced bacon tied together. I tied it three times across

  3. Bring all the marinade ingredients together and bring to a boil and as soon as it’s boiling remove from the heat.

  4. Let the marinade cool and then pour over the bacon.

  5. Place in the refrigerator and turn once daily for 3 days.

  6. After it’s marinated take it out and pat dry.

  7. Soak your wood chips, I’m using apple, for at least an hour.

  8. In the smoker!

  9. Done! ?
