This warm & gooey version of Caprese salad will knock your blocks off! #keto


  1. 2 tomatoes
  2. 1 TBLSPN olive oil
  3. To Taste salt
  4. To Taste pepper
  5. To Taste oregano
  6. 1/2 Block Parmesan cheese
  7. 12-14 fresh basil leaves
  8. To Taste crumbled Parmesan


  1. Preheat oven to 400• F, Thick slice tomatoes ? (1/3-1/2 inch) and place on parchment paper lined sheet pan.

  2. Lightly brush with olive oil and sprinkle with salt ? pepper, and oregano.

  3. Roast tomatoes for about 10 minutes until they start to look roasted

  4. Remove from oven, top with thinly sliced Parmesan, one basil leaf, and sprinkle with crumbled parmesan.

  5. Return to oven for 3-5 minutes until cheese is melted & browned and basil ? is toasted.

  6. Rock N Roll! Plate and impress your friends with this warm & gooey version of caprese salad! You can top with red pepper flakes to spice it up if desired.
