- 2 large broccoli crowns
- 1 cup diced onion
- 2 tsp garlic
- 4 cups vegetable broth
- Salt & pepper
Preheat oven to 200. Chop broccoli. Spray with olive oil and season with salt and pepper. Roast for 15 minutes
Heat and spray pan. Add garlic and onions and saute for 5 minutes. Add broccoli, salt, pepper, and vegetable broth. Bring to a simmer and cook for 10 minutes.
Transfer soup to a blender and puree. Add to bowl and serve.
