Literally a throw together I did before a bbq one day.
So popular it out performed all other salads.


  1. 5-6 radishes (thinly sliced)
  2. 1 Lebanese cucumber (thinly sliced)
  3. 1 punnet cherry tomatoes (halved)
  4. 1 medium red onion (smallish pieces)
  5. Good handful baby spinach leaves
  6. 1-2 tbs olive oil
  7. to taste Salt and pepper
  8. Optional: cheese cubes or chicken pieces


  1. Half cherry tomatoes over the top of salad bowl as we want to capture as much of the fluid as possible

  2. Slice all other ingredients and add to tomatoes

  3. Add olive oil and pepper. Mix well
