Ingredients

  1. 2 tbsp Oil –
  2. Bay leaves – 1 nos
  3. Cardamom – 2 nos
  4. 1 inch Cinnamon –
  5. Star anise – 1 no
  6. 1 tsp Fennel seeds –
  7. Curry leaves – 1 string
  8. Onion – 1 no
  9. 1 tsp Ginger garlic paste –
  10. Tomato – 1 no
  11. Mixed vegetables – 1 cup (i used carrot, beans and potato)
  12. 3 tbsp Grated coconut –
  13. 3 tbsp Cashews –
  14. 1 tsp Pepper corns –
  15. Green chilli – 5 nos
  16. 1 tbsp Poppy seeds –
  17. 1 tsp Turmeric powder –
  18. Salt – 2 tsp (as required)
  19. Coriander leaves – 1 tight handful

Steps

  1. Add oil in a pressure cooker and once hot add bay leaves, cinnamon stick, fennel seeds, star anise, cardamom, curry leaves and saute for a while.

  2. Add sliced onions, fry until golden brown and add Ginger garlic paste. Once raw smell goes add tomato. When it is mushy add all the vegetables and turmeric powder.

  3. Meanwhile grind coconut, cashews, peppercorns, poppy seeds and green chilli and add to the vegetables with a cup of water and close the pressure cooker for 1 whistle.

  4. When the pressure comes down open the pressure cooker and add coriander leaves for garnishing.

  5. Mixed vegetable kurma is ready now. Enjoy it with chapati/roti.
