- 1/4 cup passionfruit juice
- 1/2 cup olive oil
- 1 tbs vinegar (I recommend apple cider)
- 1 tbs lime juice
- 2 tbs honey
- 1/4 tsp salt
- 1 1/2 cups lettuce
- 1/2 cup rocket
- 1/2 cup pomelo, chopped
- 1/4 cup toasted nuts (I used macadamia)
- 1/2 small shallot, thinly sliced
For the dressing, heat the passionfruit juice in a small pan until almost boiling.
Let cool, then combine with all other ingredients and blend thoroughly. Keeps in the fridge for a week. Shake before using.
In a separate bowl, combine the salad ingredients.
Pour dressing on salad and enjoy.
