This would have been great with carrot, onion, and celery sautéed with the garlic but I didn’t have any and I’m stuck in the house!

I pulled a pack of meat out of the freezer that said it was “hamburger meat” (venison) but it turned out to be sausage (no clue what spices were in it) which was great!

Ingredients

  1. Olive oil
  2. 3 garlic cloves
  3. 1 can beef broth
  4. 6 cups water
  5. 1 lb Ground meat with spices
  6. 1 egg
  7. 1/2 cup breadcrumbs
  8. 1 lb penne or other pasta
  9. Juice of one lemon
  10. Hard cheese such as Parmesan

Steps

  1. Whisk an egg and add it to the meat (add some spices if needed) and breadcrumbs. Mix well.

  2. Heat big pot and add oil. Sauté garlic.

  3. Add beef broth and water and bring to boil.

  4. I used a melon baller to form and drop the meatballs into the pot.

  5. Add pasta and follow directions on box for al dente. Mine was 11 minutes.

  6. Squeeze lemon into soup.

  7. Serve with grated cheese. I’m not sure what mine was but it was similar to Parmesan.
