Joel's Toddler Casserole

*No children were harmed in the making of this recipe*
I made a veggie and protein packed casserole using some of my picky eaters favorite foods. The whole family loved it!!

Ingredients

  1. 1 Can Cream of Mushroom Condensed Soup
  2. 1 Can Cream of Chicken Condensed Soup
  3. 1 Package Cream Cheese, softened
  4. 1 Packet Dry Ranch Dips Seasoning
  5. 1 Can Black Beans, rinsed
  6. 1 Bag Frozen Cauliflower Rice
  7. 1 Bag Frozen Broccoli Florets
  8. 3 Chicken Breasts, cooked and Diced
  9. 3 Cups Shredded Sharp Cheddar Cheese, (reserve 1 cup)

Steps

  1. Preheat oven to 350°F

  2. Mix together the condensed soups, cream cheese, and dry ranch mix in your casserole dish

  3. Mix in the cauliflower rice and 2 cups of cheese

  4. Mix in the black beans, Broccoli, and chicken

  5. Bake, uncovered, for 40 minutes

  6. Remove and add last cup of cheese

  7. Bake for 10 more minutes

  8. Serve and Enjoy! (Don’t forget to shut the oven off!)
