Ingredients

  1. 1 Cornish hen
  2. 1 can mushroom soup
  3. 1/2 onion, chopped
  4. Handful mushrooms, chopped
  5. 1 chili, chopped. I'm using an Anaheim
  6. Corn
  7. Carrots
  8. Smoked chili's, optional but really good!

Steps

  1. The hen. It came frozen so pressure cooked for 50 minutes in 2 cups of water.

  2. Ingredients

  3. All chopped and in the pot.

  4. Slow cook for at least 4 hours. Mine was falling off the bone at 3 hours.

  5. The soup is pretty thin with using the 2 cups of water used to pressure cook so you can thicken it up with a starch slurry or adding mashed potatoes is also a good method. The instant ones in a box or actual real potatoes!

  6. Meat is all pulled off and back in the IP.

  7. Crank it up to a hard simmer and add whatever, if, you’re using a thickener.

  8. Last minute carrots and corn. Slow cook again. An hour should do it. Some ground smoked chili’s too!

  9. Can serve alone or with rice, noodles, biscuits, or any other carbohydrate! ?
