One pot complete meal.

Ingredients

  1. 1st wave
  2. 1 cup sweet peppers multicolored
  3. 1 large onion chopped
  4. 2 tablespoons minced garlic heeping
  5. 1/2 cup celery
  6. 3 ounces bacon
  7. 1-2/3 pound ground sirloin
  8. 1/2 teaspoon ground black pepper
  9. 1 teaspoons ground cumin
  10. 1/2 teaspoon dried thyme
  11. 1/2 teaspoon ground sage
  12. As you go
  13. To taste salt
  14. 2nd wave
  15. 15 ounces canned diced tomatoes
  16. 1/2 cup green stuffed olives
  17. 1 tablespoons capers
  18. 8 ounces kale
  19. 3rd wave
  20. 29 ounces black beans
  21. 1 cup shredded cheddar cheese, sharp
  22. Garnish
  23. To taste red pepper flakes

Steps

  1. Slice the bacon. Wash the vegetables.

  2. Chop the bacon, spices, onions, celery, and peppers, and to the sirloin, in a deep pan. Brown the sirloin mixture.

  3. When the onions are translucent add the olives, capers, kale, and tomatoes. Simmer 15-20 minutes.

  4. Add the beans and cheese. When simmering add raisins. Simmer 20-25 minutes stirring occasionally.

  5. Serve. I served mine with some leftover chalupa bread.
