Essentially Chipotle’s black bean recipe with added chipotle pepper in mole to spice it up. Great served as a side dish topped with crema and green onions. To make this into a black bean soup, reserve all of the liquid in the cans and blend half of the cooked beans.
- 2 cans black beans
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- pinch allspice
- 1 garlic clove, crushed and chopped
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1 chipotle pepper in mole, skinned, seeded, and minced
Drain one of the two cans of black beans. Add both cans to a small pot and bring to simmer.
Add spices, chopped garlic, and flesh of minced chipotle pepper in mole.
Cook until garlic cooks through, beans soften, and liquid reduces.
