4 cupselbow macaroni
1⁄2 cupwhite cheddar cheese
1⁄2 cup jalapeno cheese
1⁄2 cupmild cheddar cheese
1⁄4 cup milk and cream
1 teaspoonhot pepper flakes, oregano, salt and pepper
Directions
Preheat oven to 350.
Boil the mac and cheese to almost tender.In a separate sauce pan warm the milk and cream and the spices.Once warm, add the cheeses a bit at a time till smooth and cooked through.If to thick ad a touch more milk to the right consistency.
Add the macaroni to the cheese mixture and coat thoroughly.
Grease a glass baking dish with olive oil, then add the mixture to the dish.Top with a thin layer of cheese and bake.
Bake at 350 for 25 minutes.
Note: For a bit of extra spice sprinkle the top with crushed red pepper flakes along with the cheese.
