This sandwich makes great use of all that flavorful pesto you put up over the summer. An easy way to add a bit more flavor to your meals, pesto is a favorite stirred into hot pasta, served over a goat cheese-topped crostini, drizzled over sautéed tomatoes, or mixed with mayonnaise to bump up the flavor. Cherry Peppers are red and green pumpkin-shaped chili peppers characterized by their mild, sweet and aromatic flesh. If you don’t want to buy the entire jar, look for them on your deli’s salad bar. To take this sandwich from a lunch offering to a complete and satisfying supper, serve it with a warm bowl of potato soup or alongside a hearty fall salad.


  • 3 tablespoons pesto
  • 1/3French baguette, halved horizontally
  • 2 1/2 ounces sliced roasted turkey
  • 4pickled sweet cherry peppers, sliced
  • 2 ounces fresh mozzarella, torn into large pieces

How to Make It

Spread pesto evenly over cut sides of baguette. Layer turkey, cherry peppers, and mozzarella on bottom of baguette; replace baguette top to make a sandwich. Cut in half if desired, and serve immediately.
