Cake, like love, is a many-splendored thing. it comes in so many forms—cupcakes, cheesecakes, carrot cakes, chocolate cakes, and so on, and on. But the best cake, let’s be honest, is often the cake that’s most easily available to you without having to use every implement and bowl in your kitchen. Thus the popularity of boxed cake mix, and the continual popularity of easy cakes, the kind that you don’t have to worry too much about between mixing and serving. And of this genre there is a consistent-favorite heavy-hitter: the two-step pound cake. 

You don’t need much in the way of fancy ingredients here—if you keep eggs, butter, vanilla, flour, milk, and sugar on hand, then you already have what you need for this cake. It does require quite a bit of those ingredients, but then, it also makes a whole lot of cake. A pound cake is named after the way it was traditionally made—with a pound of butter, sugar, and flour. This recipe finesses that slightly, but it’s still in the range of that rule of thumb.

You will need a bundt pan or a tube pan, though in a pinch, you could also spread your batter out over two loaf pans. You’ll also need a stand mixer. You could use a hand mixer as well, but for optimal easiness, stand mixer is the way to go here. Basically, all you do is put everything in the bowl of a stand mixer and beat it together for a minute, until it’s well combined. Scrape that mixture into a pan and bake it. That’s it. 

The only thing you need to do that’s more onerous than opening a box is measure out things, and honestly, that’s not so bad. The next time you need a weekday kind of cake, try this one. It only takes two steps.
