These simple and tasty Lettuce Wraps With Peanut Sauce are packed with all the flavors you love—umami notes from fish sauce and sesame oil, fresh brine from pickled carrots and herbs, and nuttiness and spice from the homemade peanut sauce. It’s simple enough for a weeknight, but it’s also a great meal prep staple since the carrots and peanut sauce can be made beforehand. Look for fattier ground turkey, since it won’t dry out as quickly. You can find fish sauce in the international section of your grocery store. This is a great dish to serve for your family or a group of friends who can build their own wraps. Some other great sides are fresh cucumber, rice noodles, pickled red onions, puffed rice, sliced red pepper, and lime wedges.

Ingredients

  • 1 tablespoon granulated sugar
  • 1 teaspoons kosher salt
  • 1/2cup, plus 1 tsp. rice vinegar, divided
  • 1 cup matchstick carrots (or cut 2 small carrots)
  • 3 1/2 teaspoons toasted sesame oil, divided
  • 1 tablespoon minced fresh ginger (from 1 [1-in.] piece)
  • 1 tablespoon minced garlic (about 3 garlic cloves)
  • 1 pound ground turkey (white and dark meat)
  • 3 1/2 teaspoons fish sauce
  • 2 tablespoons soy sauce, divided
  • 1/4 cup creamy peanut butter
  • 3 tablespoons water
  • 1 1/2 teaspoons honey
  • 1 teaspoon Sriracha chile sauce
  • 8butter lettuce leaves (from 1 head)
  • Torn fresh cilantro, torn mint, and chopped roasted peanuts, for garnish

How to Make It

Step 1

Stir together sugar, salt, and 1/2 cup of the rice vinegar in a medium bowl until dissolved. Stir in carrots; let stand until carrots begin to soften, at least 10 minutes or up to 30 minutes.

Step 2

Meanwhile, heat 3 teaspoons of the sesame oil in a large saucepan over medium-high. Add ginger and garlic, and cook, stirring often, until aromatic, about 1 minute. Add turkey; cook, stirring occasionally, until turkey is crumbled, lightly browned, and cooked, 6 to 7 minutes. Stir in fish sauce and 1 1/2 tablespoons of the soy sauce until fully coated. 

Step 3

Whisk together peanut butter, water, honey, Sriracha, and remaining 1 1/2 teaspoons soy sauce, 1/2 teaspoon sesame oil, and 1 teaspoon rice vinegar in a small bowl until well combined.

Step 4

Divide turkey mixture evenly among lettuce leaves; top with pickled carrots and peanut sauce. Sprinkle with cilantro, mint, and peanuts.
