Separate kale leaves from stems and tear into large pieces.
Chop up pepperoni as finely as possible.
Add pepperoni to a food processor and pulse with cashews until very finely chopped.
Add remaining ingredients and blend until smooth.
Toss kale with mixture by hand, massaging kale to get each piece fully coated.
Lay coated kale pieces in a single layer in air fryer and cook at 360°F for 8 to 10 minutes or in an oven at 300°F for 25-30 minutes flipping once halfway through.
