    DIRECTIONS

  • Separate kale leaves from stems and tear into large pieces.
  • Chop up pepperoni as finely as possible.
  • Add pepperoni to a food processor and pulse with cashews until very finely chopped.
  • Add remaining ingredients and blend until smooth.
  • Toss kale with mixture by hand, massaging kale to get each piece fully coated.
  • Lay coated kale pieces in a single layer in air fryer and cook at 360°F for 8 to 10 minutes or in an oven at 300°F for 25-30 minutes flipping once halfway through.
  • Store in sealed container in fridge for 4-5 days.
