    DIRECTIONS

  • Meatballs:
  • Combine ground chicken, egg, almond flour, parmesan cheese and dried thyme and form into 15 meatballs.
  • Place meatballs in fridge for 15 minutes to firm up.
  • Slice deli ham and Swiss cheese into small squares and stack squares (3 ham and 3 cheese alternatively).
  • Remove meatballs from fridge and push one ham and cheese stack in the center of each meatball and roll back into shape.
  • Cook in air fryer at 400°F for 10 minutes.
  • Sauce:
  • Combine broth, mustard, lemon juice, nutmeg and pepper and bring to a simmer.
  • Add heavy cream and reduce while stirring, until thickened, serve sauce immediately.
