DIRECTIONS
Preheat over to 350F (175C).In medium bowl, blend together softened butter, 2 cups flour, 1/2 cup sugar, and zest of 1/2 a Lemon.Press into the bottom of an un-greased 9×13 cake pan (I use glass).Bake for 15-20 minutes or until firm and golden.In another bowl, whisk remaining 2 1/2 cups sugar and 1/2 cup flour.Whisk in eggs, lemon juice, and remaining zest.Pour over baked crust and bake for about 50-60 minutes. Bar will still be soft, but will firm up as they cool.The hard part: Wait for them to cool, then slice into the classic square shape.OPTIONAL: Dust top of them with powdered sugar and try not to eat them all in one sitting.
