    DIRECTIONS

  • Preheat over to 350F (175C).
  • In medium bowl, blend together softened butter, 2 cups flour, 1/2 cup sugar, and zest of 1/2 a Lemon.
  • Press into the bottom of an un-greased 9×13 cake pan (I use glass).
  • Bake for 15-20 minutes or until firm and golden.
  • In another bowl, whisk remaining 2 1/2 cups sugar and 1/2 cup flour.
  • Whisk in eggs, lemon juice, and remaining zest.
  • Pour over baked crust and bake for about 50-60 minutes. Bar will still be soft, but will firm up as they cool.
  • The hard part: Wait for them to cool, then slice into the classic square shape.
  • OPTIONAL: Dust top of them with powdered sugar and try not to eat them all in one sitting. Can also make candied lemons to adorn the top.
