    DIRECTIONS

  • Add vegetables for meatballs into a food processor and chop finely. Add veggies to ground meat along with the seasonings. Hand mix meat and vegetables, seasonings, and egg and rice. Form into meatballs. Size of your choice. (Remember the bigger the balls, the longer minutes to add to the soup).
  • In a large pot, combine broth, tomatoes, carrots, celery, potatoes, and spices.Hold zucchini and cilantro until the end.
  • Bring broth to boil. Lower to a simmer and drop meatballs into the broth.DO NOT STIR and put lid on for 10 minutes.Lift the lid and add zucchini and cilantro. Simmer for another 10- 15 minutes until veggies are tender.
  • NOTE:Don’t be afraid to cook soup longer if the veggies are still hard. 10-15 more minutes will not hurt. it.
  • Cooked white or brown rice to add.
