    DIRECTIONS

  • In a medium saucepan over high heat, bring water to a boil and then drop in almonds; blanch for 45 to 50 seconds.
  • Remove from the heat and drain them in a colander. Rinse the almonds thoroughly under cold water to stop the cooking process.
  • When this is done, peel off the skins by gently squeezing them between your thumb and index finger.
